Chocolate Chip Protein Pancakes

 

Ingredients: The ingredient amounts are for two portions.

  • Cottage Cheese 225g or 8oz, 0% fat
  • Eggs 2
  • Self-Raising flour 75g or 2.6oz
  • Milk Chocolate Chips 30g or 1oz
  • Vanilla Extract ½ tsp

Instructions:

Add the cottage cheese, eggs, vanilla extract, sweetener, and flour to a blender.
Blend until smooth and lump-free.


Pour the batter into a bowl and fold in the chocolate chips.


Heat a non-stick pan over medium heat. Lightly spray with oil if needed. Spoon the
batter into small pancakes and cook for 2 to 3 minutes until bubbles form on the
surface. Flip and cook for another 1 to 2 minutes until golden and cooked through.


Serve warm with your choice of toppings.
