CHICKEN & VEGETABLE POKE BOWL
Ingredients:
- 50g mango, diced
- 50g mushrooms
- 30g green pea
- 50g carrot shredded
- 30g cucumber
- 150g white meat boneless (chicken breast/ turkey breast/ lean pork)
- 1 lime, cut into wedges
- 1 teaspoon extra virgin olive oil spray (7g)
- 50g couscous (raw)
- 100ml water
- 3g parsley
- Salt and pepper to taste
Instructions:
- Cook couscous according to packet instructions. Season and set aside.
- In a pan add 100ml of water and boil the green pea until soft and tender and keep a side.
- Spray chicken with oil and season generously with freshly ground black pepper. Cook chicken in a non-stick frying pan over medium-high heat for 3-4 minutes on each side or until golden and cooked through. Remove and set aside to rest for 5 minutes. Slice.
- Meanwhile, add the mushrooms and sauté for 5 minutes more.
- Arrange all the vegetables neatly in a bowl and drizzle some lemon juice.
