CHICKEN & VEGETABLE POKE BOWL

 

Ingredients:

  • 50g mango, diced
  • 50g mushrooms
  • 30g green pea
  • 50g carrot shredded
  • 30g cucumber
  • 150g white meat boneless (chicken breast/ turkey breast/ lean pork)
  • 1 lime, cut into wedges
  • 1 teaspoon extra virgin olive oil spray (7g)
  • 50g couscous (raw)
  • 100ml water
  • 3g parsley
  • Salt and pepper to taste

Instructions:

  1. Cook couscous according to packet instructions. Season and set aside.
  2. In a pan add 100ml of water and boil the green pea until soft and tender and keep a side.
  3. Spray chicken with oil and season generously with freshly ground black pepper. Cook chicken in a non-stick frying pan over medium-high heat for 3-4 minutes on each side or until golden and cooked through. Remove and set aside to rest for 5 minutes. Slice.
  4. Meanwhile, add the mushrooms and sauté for 5 minutes more.
  5. Arrange all the vegetables neatly in a bowl and drizzle some lemon juice.
