CHICKEN MUSHROOM MELTS
Ingredients:
- 150g boneless chicken breast, sliced
- 100g mushrooms, sliced
- 50g onion, thickly sliced
- 1 teaspoon dried oregano
- 1 teaspoon extra virgin olive oil (7g)
- 1 tablespoon balsamic vinegar
- 2 slices white bread
- 30g low-fat mozzarella cheese, grated
- Salt and pepper to taste
Instructions:
- Preheat the sandwich toaster.
- Spray some olive oil in a non-stick pan and toss the thinly sliced chicken and sauté for 5-8 minutes and then add the mushrooms and onion slices with oregano and the balsamic vinegar. Season with salt and pepper. Cook for another 5 minutes.
- To assemble the sandwich, layer the chicken mushrooms mix on to a slice of bread.
- Then top the slice with grated mozzarella and cover the sandwich with the other slice.
- Pop the sandwich in to the toaster and toast well till the cheese has melted and well-sealed.
- Cut in half and serve warm.
