CHICKEN MUSHROOM MELTS

 

Ingredients:

  • 150g boneless chicken breast, sliced
  • 100g mushrooms, sliced
  • 50g onion, thickly sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon extra virgin olive oil (7g)
  • 1 tablespoon balsamic vinegar
  • 2 slices white bread
  • 30g low-fat mozzarella cheese, grated
  • Salt and pepper to taste

Instructions:

  1. Preheat the sandwich toaster.
  2. Spray some olive oil in a non-stick pan and toss the thinly sliced chicken and sauté for 5-8 minutes and then add the mushrooms and onion slices with oregano and the balsamic vinegar. Season with salt and pepper. Cook for another 5 minutes.
  3. To assemble the sandwich, layer the chicken mushrooms mix on to a slice of bread.
  4. Then top the slice with grated mozzarella and cover the sandwich with the other slice.
  5. Pop the sandwich in to the toaster and toast well till the cheese has melted and well-sealed.
  6. Cut in half and serve warm.
