CHICKEN FAJITA SOUP

Ingredients:

  • 150g boneless chicken breast, cubed
  • 1 teaspoon extra virgin olive oil (7g)
  • 100g bell peppers, cut into bite-sized pieces 
  • 30g onion, diced
  • 1 garlic clove, minced
  • 400ml chicken broth
  • 45g low-fat cheddar cheese, grated
  • 1 teaspoon fajita seasoning
  • 1 tablespoon cooking cream 
  • 1 tablespoon sour cream 
  • 1g Cilantro
  • Salt and pepper to taste

Instructions:

  1. Add diced onion, bell peppers, garlic, chicken breast, broth, and fajita seasoning to a Instant Pot.
  2. Secure lid and cook on High pressure for 4 minutes. Quick-release pressure after the cooking cycle is complete.
  3. While the soup is pressure cooking, bring heavy cream and sour cream to room temperature.
  4. Remove the lid from the pot once pressure is released. Add cheddar cheese, stirring until melted.
  5. Add cooking cream and then sour cream.
  6. Season with salt and pepper to taste. Serve and enjoy!
