CHICKEN FAJITA SOUP

Ingredients:
- 150g boneless chicken breast, cubed
- 1 teaspoon extra virgin olive oil (7g)
- 100g bell peppers, cut into bite-sized pieces
- 30g onion, diced
- 1 garlic clove, minced
- 400ml chicken broth
- 45g low-fat cheddar cheese, grated
- 1 teaspoon fajita seasoning
- 1 tablespoon cooking cream
- 1 tablespoon sour cream
- 1g Cilantro
- Salt and pepper to taste
Instructions:
- Add diced onion, bell peppers, garlic, chicken breast, broth, and fajita seasoning to a Instant Pot.
- Secure lid and cook on High pressure for 4 minutes. Quick-release pressure after the cooking cycle is complete.
- While the soup is pressure cooking, bring heavy cream and sour cream to room temperature.
- Remove the lid from the pot once pressure is released. Add cheddar cheese, stirring until melted.
- Add cooking cream and then sour cream.
- Season with salt and pepper to taste. Serve and enjoy!
