CHICKEN CACCIATORE

Ingredients:
- 200g Chicken thigh
- 1 teaspoon extra virgin olive oil (7g)
- 50g onions, chopped
- 100g green bell peppers, chopped
- 100g canned diced tomatoes, with their juices
- 1 clove of garlic, minced
- 1/2 teaspoon dried rosemary
- 50ml water
- 0.2g sesame seeds , garnish
- Salt and pepper to taste
Instructions:
- Sprinkle both sides of the chicken with salt and pepper. Set aside.
- Heat a skillet over medium-high heat and add the oil.
- Next, add the chicken to the skillet and cook for 4 minutes on each side. Transfer chicken to a large plate, cover, and set aside.
- Add chopped onions, bell peppers, garlic, and rosemary to the pan and cook, stirring occasionally, for 2 minutes.
- Add water and bring to a boil. Cook for 2 to 3 minutes, stirring occasionally until almost all of the water has evaporated.
- Stir in the tomatoes and add the chicken back to the pan. Reduce heat to low, cover, and simmer for 25 minutes until chicken is cooked through.
- Taste and add additional salt, if needed.
- Once done Sprinkle the sesame seeds and serve.
