CHICKEN BURRITO BOWL

 

Ingredients:

  • 65g (raw weight) white rice cooked in 130ml water     
  • 1 lime
  • 20g cilantro
  • 150g boneless chicken breast
  • 1 teaspoon Mexican seasoning (cilantro, chili powder, Mexican oregano, cumin, cinnamon, cloves, anise)
  • 50g canned Red kidney beans
  • 80g mango
  • 2 tablespoon low-fat Greek yogurt
  • 10g low-fat shredded cheddar cheese
  • 20g shredded lettuce
  • 20g nachos chips

Instructions:

  1. Toss cooked white rice with chopped cilantro, juice of a lime, and a pinch of salt
  2. Toss chicken breast with your favorite Mexican seasoning and bake or grill as desired for about 5 minutes on each side.
  3. Once the chicken is cooked, cut into bite-size pieces
  4. Warm the kidney beans in the microwave
  5. Layer the bowl according to your preference.
  6. Finish off with cheddar cheese and a wedge of lime
  7. Serve with chips.
