CHICKEN BURRITO BOWL
Ingredients:
- 65g (raw weight) white rice cooked in 130ml water
- 1 lime
- 20g cilantro
- 150g boneless chicken breast
- 1 teaspoon Mexican seasoning (cilantro, chili powder, Mexican oregano, cumin, cinnamon, cloves, anise)
- 50g canned Red kidney beans
- 80g mango
- 2 tablespoon low-fat Greek yogurt
- 10g low-fat shredded cheddar cheese
- 20g shredded lettuce
- 20g nachos chips
Instructions:
- Toss cooked white rice with chopped cilantro, juice of a lime, and a pinch of salt
- Toss chicken breast with your favorite Mexican seasoning and bake or grill as desired for about 5 minutes on each side.
- Once the chicken is cooked, cut into bite-size pieces
- Warm the kidney beans in the microwave
- Layer the bowl according to your preference.
- Finish off with cheddar cheese and a wedge of lime
- Serve with chips.
