CARROT CAKE BAKED OATS

Ingredients:

  • 45g rolled oats
  • 2 whole eggs
  • 100ml low-fat almond milk
  • 100g carrot, grated
  • 30g dates
  • 1 tablespoon sugar-free syrup
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon allspice

Instructions:

  1. Lightly grease the oven-safe dish or ramekin. Note that the bake times will change if you are using a baking dish of different sizes. Preheat the oven to 350° F.
  2. Add rolled oats to the blender and grind to a powder. Add baking powder, cinnamon, ginger, allspice, and salt and process again so they get mixed in
  3. In a bowl whisk egg. Add milk and sugar free syrup. Add the grated carrots and mix well.
  4. Add dry ingredients to the wet ingredients. And mix well.
  5. Stir in the chopped dates.
  6. Pour the batter into the greased dish. Bake for 20 minutes.
  7. Let it cool, cut and server.
