Berry & Apple Breakfast Crumble

Ingredients: The ingredient amounts are for two servings.
- Frozen Mixed Berries 300g or 10.6oz
- Honey 1 tbsp
- Mixed Seeds 1 tbsp
- Cinnamon 1 tsp
- Salt pinch
- Greek Yoghurt 200g or 7.1oz
- Apple 1 medium
- Chia Seeds 2 tbsp
- Flax Seeds 1 tbsp
- Lemon Juice 1 lemon
- Oats 30g or 1oz
- Peanut Butter 1 tbsp
- Egg White 1 egg
Instructions:
Place the frozen mixed berries, diced apple, flax seeds, and chia seeds into a small
saucepan. Squeeze in the juice of one lemon. Heat over medium heat for
approximately 10 minutes, stirring occasionally, until the fruit has broken down into
a thick, jammy consistency.
While the fruit is simmering, combine the jumbo oats, peanut butter, egg whites,
honey, mixed seeds, cinnamon, and salt in a small mixing bowl. Stir well until the
mixture forms a clumpy, wet crumble texture.
Transfer the oat mixture to an air fryer basket lined with parchment paper. Air fry
at 180°C (356°F) for 5–8 minutes, shaking halfway through, until the crumble is
golden brown and crunchy.
Divide the warm berry and apple mixture between two bowls. Top each bowl with
100 g (3.5 oz) of cold Greek yoghurt. Finish by sprinkling the toasted crumble
generously over the top. Serve immediately while the fruit is warm and the
crumble is crisp.
