BEETROOT AND FETA CHEESE SALAD

Ingredients:
For Salad:
- 200g beetroots, diced
- 100g cucumber, diced
- 50g onion, diced
- 45g low-fat feta cheese
- 5g roughly chopped parsley
For Lemon Vinaigrette:
- 2 tablespoons lemon juice
- 1 teaspoon extra virgin olive oil (7g)
- 1 garlic clove – minced
- Salt and pepper to taste
Instructions:
For Salad:
- Dice the beetroot and boil on medium heat for 20 mins or until it can be easily pierced through with a knife.
- Cut the feta cheese into small dices.
- Roughly chop the parsley.
- Combine beetroot, cucumber, onion, feta cheese, and parsley with the lemon vinaigrette and serve.
For Lemon Vinaigrette:
- Mix all ingredients in a bowl and whisk slightly.
