BAKED WHITE FISH WITH HERB CAULIFLOWER SALAD
Ingredients:
- 150g white fish (cod, Grouper, halibut, Snapper etc.)
- 200g finely grated cauliflower
- 20g parsley
- 20g fresh mint leave
- 1 tsp olive oil
- 20g pitted olives
- 1 lemon
- Salt
- Pepper
Method:
- Preheat the oven to 200c. Finely chop the parsley and the mint.
- Prepare the fish by placing on a parchment paper in a baking dish and rub with olive oil.
- Season with salt and pepper.
- Sprinkle lemon juice and the fresh herbs. Bake in the oven for 15minutes or until the thickest part is cooked.
- Meanwhile finely chop the olives. Zest the juice of the lemon.
- In a large bowl mix together the grated Cauliflower, herbs, olives, lemon zest, and some lemon juice.
- Season the salad with salt and pepper.
- When the fish is cooked serve with the cauliflower salad.
