ASIAN FISH WITH VEGETABLES
Ingredient:
- 100g shredded cabbage
- 50g bell pepper
- 100g scallions, with green
- 150g white fish fillet
Sauce:
- 1 teaspoon olive oil
- 1 garlic clove, crushed
- 2 tablespoon unsalted peanuts, crushed in blender
- 1 teaspoon grated fresh ginger
- 50ml water
- ½ teaspoon corn-starch
- 1 teaspoon reduced-sodium soy sauce
- 1 teaspoon sesame seeds
- 1 teaspoons rice vinegar
- 1 teaspoon sugar free syrup
Garnish:
- 2 tablespoons chopped cilantro (or parsley)
- ½ lime
Instructions:
Step 1
Spread vegetables over bottom of shallow microwave-safe dish. Top with fish. In a small bowl, combine sauce ingredients; pour overall.
Step 2
Cover tightly with microwave plastic wrap, and microwave on high 8-10 minutes. Vegetables will be crisp-tender.
Step 3
Place filet on a plate; spoon vegetables and sauce around fish. Garnish with cilantro and a squeeze of lime juice.
