SPICY PEANUT CHICKEN WRAPS

 

Ingredients:

  • 100g boneless chicken breast
  • 7g peanut butter
  • 1tsp sesame oil
  • 1/2 lime
  • ¼ tsp garlic powder
  • 1 tsp ginger (grated)
  • 1 Mission low carb wrap
  • 50g cucumber
  • 50g carrot
  • 30g lettuce
  • Salt
  • 1 tsp Chilli flakes

Method:

  • Put 7g crunchy peanut butter in a bowl and whisk in 1 tbsp just-boiled water.
  • Stir in 1 tsp grated ginger, chilli flakes, 1 tsp toasted sesame oil and a squeeze 1/2 of lime juice, then shred a cooked (boiled, grilled or baked etc…) chicken breast and toss with the peanut sauce.
  • Add the chicken on to a wrap, then top with shredded carrot, cucumber, shredded lettuce and coriander. Roll up and eat.
