Thai Chicken Burgers with Mango Slaw

Ingredients: The ingredient amounts are for four servings.

  • Chicken Mince 500g or 17.6oz
  • Salt pinch
  • Black Pepper twist
  • Olive Oil 1 tsp
  • Mango Slaw 1 diced mango, 80g or 2.8oz
  • shredded cabbage, 1 small grated carrot,
  • juice of 1 lime, 1 tsp honey, 2 tbsp chopped
  • coriander.
  • Spicy Mayo 1 tbsp reduced fat mayo, 1 tbsp
  • siracha, juice of 1 lime.
  • Spring Onion 2
  • Garlic Cloves 2
  • Ginger 1 tbsp
  • Red Curry Paste 2 tbsp
  • Soy Sauce 1 tbsp
  • Breadcrumbs 20g or 0.7oz
  • Egg 1
  • Potato Bun 4

Instructions:

In a large bowl, mix the chicken mince, chopped spring onions, garlic, ginger, red
curry paste, soy sauce, panko breadcrumbs, egg, salt, and pepper. Form the
mixture into four equal patties.


Heat olive oil in a frying pan over medium heat. Sear the patties for 3 to 4 minutes
on each side until golden. Transfer to the oven at 180°C and cook for a further 6 to
8 minutes until cooked through.


In a bowl, combine the diced mango, shredded cabbage, grated carrot, lime juice,
honey, and coriander. Toss well to coat.


Mix the mayonnaise, sriracha, and lime juice in a small bowl. Spread spicy mayo
onto the buns. Add the chicken patty, then top with the mango slaw. Close the bun
and serve.
