Ingredients: The ingredient amounts are for four servings.

  • Halloumi 225g or 8oz (sliced)
  • Baby Spinach 100g or 3.5oz
  • Baked Beans 2 tins
  • Eggs 4
  • Salt pinch
  • Black Pepper twist
  • Sesame Seeds 1 tsp (1/4 per portion)

Instructions:

Air fry the halloumi at 200°C for 15 to 20 minutes, flipping halfway, until golden and
crisp. Alternatively, grill or pan-fry for a few minutes on each side.


Bring a saucepan of water to the boil. Add the eggs and cook for 6 minutes.
Transfer to ice-cold water for 2 to 3 minutes, then peel and set aside.


Add a handful of spinach to each container. Spoon in 3 to 4 tablespoons of baked
beans. Add the halloumi slices and place an egg on top. Season with salt and
pepper. Sprinkle with sesame seeds.


Store in the fridge for up to 3 to 4 days. Reheat in the microwave for about 2
minutes, adding the egg in for the final 45 seconds to warm through.
