Cajun Chicken Wraps

Ingredients: The ingredient amounts are for two servings.
- Chicken Breast 2 (125g or 4.4oz per breast)
- Yellow Pepper 1, medium
- Tortilla Wrap 2, large
- Mozzarella 60g or 2.1oz, reduce fat
- Cream Cheese 50g or 1.7oz, light
- Tomato Puree ½ tbsp
- Cajun Seasoning 2 tsp
- Olive Oil 1 tsp
Instructions:
Cut the chicken into small 1 to 2 cm chunks. Coat with the Cajun seasoning. Heat a
frying pan over medium to high heat with a spray of oil. Add the chicken and
sliced pepper. Cook for about 12 minutes, stirring occasionally, until the chicken is
cooked through.
Tip the cooked chicken and pepper into a large bowl. Add the cream cheese,
tomato purée, and grated cheese. Stir until everything is well combined.
Warm the wraps briefly in the microwave. Spoon half of the mixture into the centre
of each wrap. Fold the sides in, flatten slightly, then roll tightly into a wrap.
Add another spray of oil to the same pan. Place the wraps seam-side down and
cook for a few minutes until golden. Flip and cook the other side until crisp.
Leave to cool for a couple of minutes, then slice or serve whole.
