Mango Chia Breakfast Pots

 

Ingredients: The ingredient amounts are for four portions.

  • Mango 2, fresh
  • Vanilla Extract 1 tsp
  • Semi Skim Milk 240ml or 8.1fl oz
  • Greek Yoghurt 130g or 4.5oz
  • Coconut Milk 120g or 4.2oz
  • Frozen Mango Chunks 100g or 3.5oz
  • Chia Seeds 80g or 2.8oz
  • Deciccated Coconut 4 tbsp
  • Honey 1 tbsp

Instructions:

Add 2 fresh mangoes, milk, Greek yogurt, coconut milk, honey, and vanilla extract
to a blender. Blend until smooth.


Pour the mixture into a large bowl or jug. Stir in the chia seeds until evenly
combined. Leave to sit for 5 minutes, then stir again to stop the seeds from
settling.


Cover and refrigerate for at least 2 hours or overnight until thick and set.


Divide the chia mixture between 4 jars. Top with 25g fresh or frozen mango and a
tbsp of shredded coconut.
