EGG FRIED RICE
Ingredients:
(makes 01 serving)
- 65g raw long grain rice
- 1 tsp Olive oil
- 1 onion, finely chopped
- 1 full egg 3 egg whites, beaten
- 2 spring onions, sliced, to serve
- Salt and pepperÂ
Method:
- Cook the rice following pack instructions, then drain, spread it out to steam-dry and set aside.
- Heat 1 tbsp of the oil in a large wok over a high heat, then add the onion and fry until lightly golden, for about 5 mins. Add the rice, stir and toast for about 3 mins, then keep aside.
- Add the egg mixture. Cook a little, then mix in with the rice – stir vigorously to coat the grains. If you prefer the egg chunkier, allow to set for a little longer before adding the rice. serve into a bowl and scatter over the spring onion to serve.
Modification:
- If you like to make more portions, multiply the ingredients into the number of portions.
- Adding more fresh Vegetables and sesame oil will give more flavor to the dish.
