Air Fryer Nandos Burger

Ingredients: (Makes 2)
- Chicken Breast 2 (125g or 4.4 oz per breast)
- Nandos Chilli Jam 2 tsp
- Olive Oil 1 tsp
- Brioche Burger Bun 2
- Halloumi 60g or 2.1oz, reduced fat
- Red Pepper 1, small
- Mozzarella Slice 2
- Brown Onion ½, small
- Nandos Peri Peri 2 tbsp, lemon & herb
- Nandos Perinaise 2 tsp
Instructions:
In a bowl, toss the sliced chicken breast, sliced pepper, sliced onion and Nando’s
marinade together.
Preheat the air fryer to 180°C (356°F). Add the marinated chicken, peppers and
onions to the air fryer basket. Air fry for 15–20 minutes, or until the chicken is
cooked through (internal temp of 75°C/165°F).
Meanwhile, slice the halloumi. Fry in a non-stick pan over medium heat for 2–3
minutes per side, until golden and crisp.
Lightly toast the brioche buns either in a pan, toaster, or air fryer for 1–2 minutes.
Spread 1 tsp perinaise on the base of each toasted bun. Top with the cooked
chicken breast, a slice of mozzarella, fried halloumi, and 1 tsp chilli jam per burger.
Place the burger tops on and press gently. Return the assembled burgers to the air
fryer at 180°C (356°F) for 3–5 minutes, until the cheese melts and the bun crisps
slightly.
