ROASTED BBQ CHICKEN DRUMSTICKS

Ingredients:

  • 200g chicken drumsticks
  • 1 teaspoon extra-virgin olive oil (7g), divided
  • 250g carrot, cut diagonally
  • 50g onion, rough chopped
  • 3 cloves of garlic
  • 1/4 teaspoon smoked paprika
  • 2 tablespoon BBQ sauce 
  • Salt and pepper to taste

Instructions:

  1. Heat oven to 450 degrees F (230 degrees C).
  2. Place the cut carrots, onions, and garlic in a small baking dish. Add half of the olive oil, salt, pepper, and smoked paprika and toss to coat. Set aside.
  3. In a small bowl, whisk together the BBQ Sauce, remaining olive oil, ¼ teaspoon salt, and ¼ teaspoon pepper.
  4. Place the chicken drumsticks in a small bowl and pour the BBQ sauce mixture over the chicken. Using your fingers, make sure the sauce mixture coats each chicken drumstick.
  5. Lay the chicken on top of the vegetables in the baking dish.
  6. Bake for 30 minutes.
  7. Remove from the oven and cover the baking dish with foil. Let chicken rest for 10 minutes and enjoy.
