WHITE FISH WITH TOMATO SALSA

Ingredients:
- 150g white fish fillets (cod, halibut, or tilapia)
- 1 teaspoon extra-virgin olive oil (7g)
- 80g red tomato, finely chopped
- 10g basil leaves, chopped
- 1 teaspoon balsamic vinegar
- Salt and black pepper to taste
- 50g salad leaves
Instructions:
- Preheat grill or broiler on high
- Combine tomatoes, basil, oil, and vinegar in a medium bowl; mix well.
- Season with salt and pepper if desired; mix well. Set aside
- Top baking sheet with foil. Lay the fish and top with tomato salsa mixture. Pull up the sides of the foil and close, leaving a small opening at the top.
- Grill or broil for 7 to 9 minutes. Open foil carefully (steam will come out). Fish should flake easily when tested with a fork.
- Serve with salad leaves.
