PROTEIN FRUIT CUSTARD

Ingredients:

  • 250ml unsweetened almond milk 
  • 1 teaspoon flax seeds
  • 1 scoop vanilla whey protein powder (35g) 
  • 2 tablespoon custard powder (or corn-starch or arrowroot powder)
  • 30ml warm unsweetened almond milk (to make dissolve custard powder)
  • 2 tablespoon sugar-free syrup

Fruits of your choice:

  • 50g apple
  • 100g ripe mango 
  • 60g banana 
  • 50g pomegranate

Instructions:

  1. Rinse the fruits thoroughly and chill them in the fridge. Refrigerating after chopping will help the custard less runny when adding the fruits. 

How to make custard:

  1. Heat milk in a wide heavy bottom pan or pot. Add sugar-syrup and protein powder. Stir until it dissolves.
  2. Meanwhile, add custard powder to a small cup and stir it with 30ml milk (warm). The mixture has to be smooth without any lumps.
  3. When the milk in the pot turns hot (not boiling), pour the custard mix into the hot milk gradually. Whisk well to incorporate.
  4. Keep stirring and cook on low to medium heat until the custard turns thick. The custard must coat the back of the spoon well but must be yet of runny consistency. 
  5. Take it off the heat and whisk it well to make it super smooth. Cover immediately. Cool this completely and chill it in the fridge.

How to make fruit custard:

  1. Whisk the custard well before serving. This ensures even and smooth texture in the custard.
  2. Pour the custard over the chopped fruits and gently mix. Serve fruit custard immediately.
