CURRY FISH AND RICE
Ingredients:
- 150g white fish fillet
- 130ml water
- 65g basmati rice (raw)
- 1 teaspoon butter (7g)
- 1/2 diced onion
- 1 teaspoon curry powder
- 20g sliced almonds
- 150g frozen peas, thawed
- Salt and Pepper to taste
Method:
Step 1
In a pan Heat the butter and add onion, curry powder, and salt over medium heat and cook for about 2 minutes. Add water and then Stir in rice into onion mixture and white fish over rice. Sprinkle with almonds.
Step 2
Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, about 20 minutes. Fish should be heated through, and the flesh should be opaque and flake easily. Mix in peas and fluff rice with a fork before serving.
