CHICKEN PUMPKIN SABJI

 

Ingredients:

  • 250g pumpkin
  • 150g boneless chicken breast
  • 1 tablespoon coconut
  • 1 teaspoon ginger
  • ½ teaspoon cumin powder
  • 1 teaspoon sugar free syrup
  • ¼ teaspoon red chilli
  • ¼ teaspoon turmeric
  • 1 teaspoon olive oil (7g)
  • 1 bay leaf
  • ¾ red chilli
  • 1 medium onion
  • ½ teaspoon fennel
  • ½ teaspoon mustard 

Method:

Step 1 

Heat olive oil in a pan and give seasoning of bay leaf, red chilli, fennel, cumin, mustard.

Step 2

Add pumpkin, ginger, red chilli powder, turmeric, salt, and mix. Continue frying for three-four minutes then add the diced chicken and cook for more 5 minutes.

Step 3

Cover and allow pumpkin to release water then Add the grated coconut. 

Step 4

Add water and boil if the pumpkin is not done. It will have some gravy and pumpkin will be soft.

Step 5

Check the pumpkin with a fork to see if its tender. serve hot.
