WALDORF SALAD WITH COTTAGE CHEESE
Ingredients:
- 30g pitted black olives
- 150g boneless Chicken Breasts
- 150g low fat Cottage Cheese
- 20g Golden Raisins
- 50g Celery diced
- 150g green Apple
- 1 tablespoon chives chopped
- Salt & Pepper to taste
Method:
- Wash and chop all the fruits & veggies.
- Cut the fat off the chicken breasts. Season with Salt and pepper both sides of the chicken.
Bake chicken at 350 degrees F for 12 minutes.
- Once the chicken is baked fully, chop it up into ¼ inch pieces.
- Mix the chicken, cottage cheese, celery, olives, apple and raisins in a large bowl.
- Season with salt and pepper to taste. Garnish with chives.
