WALDORF SALAD WITH COTTAGE CHEESE

 

Ingredients:

  • 30g pitted black olives
  • 150g boneless Chicken Breasts 
  • 150g low fat Cottage Cheese
  • 20g Golden Raisins
  • 50g Celery diced
  • 150g green Apple
  • 1 tablespoon chives chopped
  • Salt & Pepper to taste

Method:

  1. Wash and chop all the fruits & veggies.
  1. Cut the fat off the chicken breasts. Season with Salt and pepper both sides of the chicken.

Bake chicken at 350 degrees F for 12 minutes. 

  1. Once the chicken is baked fully, chop it up into ¼ inch pieces.
  1. Mix the chicken, cottage cheese, celery, olives, apple and raisins in a large bowl.
  1. Season with salt and pepper to taste. Garnish with chives.
