VEGAN POTATO CURRY

Ingredients:

  • 250g Carisma potatoes, cubed 
  • 1 teaspoon extra virgin olive oil (7g)
  • 40g can chickpeas
  • 50g bell pepper, sliced
  • 50g spinach
  • 60ml can of coconut milk
  • 200g water 
  • 1/2 teaspoon red chili flakes 
  • 1/2 teaspoon minced garlic
  • 2 tablespoon curry paste
  • Salt and pepper to taste

Instructions:

  1. Cut the potatoes into small cubes and slice the bell pepper.
  2. Cook the potatoes, bell pepper, and garlic in the oil over medium-high heat (until the potatoes begin to soften).
  3. While the vegetables are cooking add the curry paste, and red chili flakes to the vegetables and continue cooking.
  4. Mix in the coconut milk, water, salt, and pepper to taste, and add chickpeas.
  5. Cook for approximately 10-15 minutes till the potatoes is soft.
  6. Remove from heat and mix in the spinach.
  7. Serve hot and enjoy!
