VEGAN POTATO CURRY

Ingredients:
- 250g Carisma potatoes, cubed
- 1 teaspoon extra virgin olive oil (7g)
- 40g can chickpeas
- 50g bell pepper, sliced
- 50g spinach
- 60ml can of coconut milk
- 200g water
- 1/2 teaspoon red chili flakes
- 1/2 teaspoon minced garlic
- 2 tablespoon curry paste
- Salt and pepper to taste
Instructions:
- Cut the potatoes into small cubes and slice the bell pepper.
- Cook the potatoes, bell pepper, and garlic in the oil over medium-high heat (until the potatoes begin to soften).
- While the vegetables are cooking add the curry paste, and red chili flakes to the vegetables and continue cooking.
- Mix in the coconut milk, water, salt, and pepper to taste, and add chickpeas.
- Cook for approximately 10-15 minutes till the potatoes is soft.
- Remove from heat and mix in the spinach.
- Serve hot and enjoy!
