TURKEY PUMPKIN CHILI
Ingredients:
- 1/2 medium onion chopped
- 1 teaspoon extra virgin olive oil (7g)
- 2 cloves garlic minced
- 150g boneless turkey breast
- 50g bell pepper chopped
- 1 diced tomato
- 250g pumpkin
- 1 teaspoon chilli powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/4 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper optional
- 200ml chicken stock
- Salt & pepper to taste
- 1 tablespoon chopped cilantro
Method:
- In a soup pot over medium-high heat, sauté the onion with the olive oil for 5 minutes.
- Add the garlic and meat and continue cooking for approximately 7 minutes.
- Add the remaining ingredients to the pot and give it a good stir. Increase the heat to high, and just when it starts to boil, reduce the heat so it is simmering. Cook the chili for 15-20 minutes, stirring periodically.
