TUNA STUFFED TOMATOES

 

Ingredients:

  • 150g canned tuna, drained
  • 2 large tomatoes
  • 2 stalks celery
  • 1 teaspoon extra virgin olive oil(7g)
  • 20g low fat mozzarella, grated 
  • 20g fresh flat-leaf parsley leaves
  • Salt and pepper to taste

Method:

  1. With a sharp knife, slice a very thin piece off the bottom and 1/4 in. off the top of each tomato. With a spoon, scoop out the seeds and pulp. Roughly chop the pulp and tomato bottoms and place in a large bowl.
  1. Add the tuna, celery, oil and 1/4 tsp each salt and pepper, and toss to combine: fold in the parsley.
  1. Spoon the tuna mixture into the tomatoes and top with grated cheese. Microwave for2 minutes and serve.
