TUNA PUMPKIN PATTIES

 

Ingredients:

  • 150g pumpkin, grated
  • 150g canned tuna (in water or brine)
  • 1 teaspoon extra virgin olive oil
  • 40g green onions sliced
  • 1 whole egg
  • 1 tablespoon low-fat greek yogurt 
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • 50g salad leaves
  • Salt and pepper to taste

Instructions:

  1. Mix all of the ingredients in a bowl except the salad leaves and Greek yogurt.
  2. Meanwhile preheat a nonstick skillet, then form the mixture into shapes of patties.
  3. Fry each pattie approximately for 4-5 minutes on both sides or till browned.
  4. Serve the patties with fresh salad leaves and dress the salad leaves with Greek yogurt.
