TUNA POTATO SALAD
Ingredients:
- 250g Carisma Potatoes, washed
- 100g cucumber; peeled, deseeded and sliced
- 50g sliced red onion
- 2 tablespoons fresh chopped dill seed
- 150g can Tuna (in water or brine)
- 50g non-fat plain Greek yoghurt
- ½ teaspoon thyme
- ½ teaspoon tarragon
- 1 teaspoon lemon juice
- 10g coriander leaves
- Salt and black pepper to taste
Instructions:
- Cook potatoes in salted boiling water until tender; cool completely.
- Cut into 1/2-inch chunks.
- In a large bowl, combine potatoes, cucumber, onion and dill; set aside.
- In another bowl, lightly toss tuna with Greek yoghurt.
- Gently fold tuna mixture into potato mixture.
- Season to taste with black pepper.
- Top with chopped coriander
- Cover and chill until ready to serve.
