TUNA NOODLES BAKE

 

Ingredients:

  • 250g low calorie Slendier noodles (Well Rinsed)
  • 250ml water
  • 1 teaspoon olive oil (7g)
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 teaspoon dried chilli flakes
  • 100g chopped tomatoes
  • 150g canned tuna
  • 75g shredded carrot
  • 75g shredded cabbage
  • ½ teaspoon rosemary
  • 20g part skim mozzarella cheese 
  • salt and pepper to taste

Method:

  • Place noodles in a bowl and cover with boiling water, set aside.
  • Heat the oven to 190C for 10minutes. Heat the olive oil in a pan and cook the onion for 3 minutes until softened a little. Add the garlic and chilli flakes, carrot, cabbage and cook for 5 minutes. Add the tomatoes and add a splash of water, then simmer for 10 minutes. Season with salt and pepper.
  • Stir the tuna into the sauce with the rosemary and drained noodles, and tip into a baking dish. Scatter over the cheese then bake for 20-25 minutes or until piping hot and bubbling.
