TUNA BURGER

 

Ingredients:

  • 150g chunk light canned tuna, drained
  • 20g coarse dry whole-wheat breadcrumbs
  • 1tbsp low-fat mayonnaise, divided
  • 50g finely chopped celery
  • 50g finely chopped onion
  • ½ tsp salt
  • 1 tsp extra-virgin olive oil
  • 1 whole-wheat hamburger buns or English muffins, toasted
  • 1 lettuce leaves
  • 1 tomato sliced
  • cucumber

Method:

  • Combine tuna, breadcrumbs, mayonnaise, celery, onion. Salt and pepper in a medium bowl, breaking up any larger pieces of tuna until the mixture is uniform and holds together and mould the mixture in to a patty.
  • Heat oil in a large non-stick skillet over medium heat. Cook until heated through and golden brown, about 2 minutes per side.
  • Spread the top half of each bun (or English muffin) with low fat mayonnaise and place the patty, lettuce and tomato on the bottom half.
