TUNA BURGER
Ingredients:
- 150g chunk light canned tuna, drained
- 20g coarse dry whole-wheat breadcrumbs
- 1tbsp low-fat mayonnaise, divided
- 50g finely chopped celery
- 50g finely chopped onion
- ½ tsp salt
- 1 tsp extra-virgin olive oil
- 1 whole-wheat hamburger buns or English muffins, toasted
- 1 lettuce leaves
- 1 tomato sliced
- cucumber
Method:
- Combine tuna, breadcrumbs, mayonnaise, celery, onion. Salt and pepper in a medium bowl, breaking up any larger pieces of tuna until the mixture is uniform and holds together and mould the mixture in to a patty.
- Heat oil in a large non-stick skillet over medium heat. Cook until heated through and golden brown, about 2 minutes per side.
- Spread the top half of each bun (or English muffin) with low fat mayonnaise and place the patty, lettuce and tomato on the bottom half.
