TOFU SCRAMBLE

 

Ingredients:

  • 150g extra-firm tofu, liquid drained and broken to bit size pieces
  • 1 teaspoon extra virgin olive oil (7g)
  • 45ml water
  • 2 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground turmeric 
  • 2 garlic cloves, minced
  • 30g cilantro leaves
  • Salt and pepper to taste

Method:

  1. In a small bowl, combine cumin, thyme, paprika, and turmeric. Add 45ml water and whisk to combine
  1. In a skillet heat a teaspoon of olive oil. Add tofu to skillet in an even layer, season with salt and pepper. Let cook undisturbed for 7 to 8 minutes, until undersides are golden. 
  1. Add garlic to skillet and stir into tofu. Cook until fragrant, 1 to 2 minutes, and then add spice mixture. Stir to incorporate all ingredients, then continue cooking, stirring occasionally, for 2 to 3 more minutes, until all water is evaporated, and spices are fragrant. Season to taste with salt and pepper to taste, garnish with cilantro, and serve immediately.
