Ingredients: The ingredient amounts are for four servings.

  • Chicken Breast 4 (125g or 4.4oz per breast)
  • Oyster Sauce 1 tbsp
  • Sugar 1 tsp
  • Water 2 tbsp
  • Basmati Rice 60g or 2.1oz per portion, dry
  • Garlic 3 cloves
  • Thai Red Chilli 2
  • Thai Basil Leaves 1 cup
  • Olive Oil 1 tsp
  • Soy Sauce 2 tbsp
  • Fish Sauce 1 tbsp

Instructions:

In a small bowl, mix the soy sauce, fish sauce, oyster sauce, sugar, and water. Set
aside.


Heat a pan over medium to high heat with a little oil. Add the chicken and cook for
about 3 minutes until lightly browned.


Add the garlic and Thai chillies to the pan. Cook for 2 minutes until fragrant. Pour in
the sauce, increase the heat, and cook for 5 minutes until thickened and coating
the chicken. Add the Thai basil and stir briefly until just wilted. Remove from the
heat.


Spoon over freshly cooked rice and serve immediately.
