SWEET POTATO & GROUND BEEF SOUP
Ingredients:
- 50g carrots, chopped
- 150g ground lean beef
- 50g green peppers, chopped
- 2 garlic cloves, chopped
- 1 teaspoon chili powder
- 350ml water
- 30g red onions, chopped
- 1 teaspoon curry powder
- 200 g sweet potato. Chopped
- 1/2 teaspoon toasted sesame seeds
- 5g parsley
- salt and freshly ground black pepper to taste
Instructions:
- Heat a large, deep pan on low heat and add the onions, garlic, carrots, peppers, and ground beef and the curry and chili powder to a large pan and fry gently for 10 minutes.
- Once cooked add the sweet potato, water, and salt, and pepper and simmer for 30 minutes.
- Blend everything and simmer for 5 more minutes.
- Sprinkle toasted sesame on top and garnish with parsley, then serve.
