SWEET POTATO BANANA PANCAKES

Ingredients:
- 250g sweet potato, cubed
- 120g egg whites
- 1 teaspoon extra-virgin olive oil (7g)
- 100ml unsweetened low-fat almond milk
- 30g Oats, ground into flour
- 1 scoop vanilla protein powder (35g)
- 10g flax seeds
- 1 teaspoon pumpkin pie spice
- ½ teaspoon baking powder
- 60g banana, sliced
- 20g almonds, chopped
Instructions:
- Fill a pot with water and bring to a boil. Stir in sweet potato and return to a boil. Cook until sweet potato is tender, 7 to 10 minutes; drain.
- Mash sweet potato in a small bowl with a fork.
- Mix mashed sweet potato, egg whites, milk, oat flour, protein powder, flax seeds, pumpkin pie spice, and baking powder in a bowl. Stir in chopped banana, almonds until batter is combined.
- Spray oil in a non-stick skillet over medium heat. Pour enough batter into the skillet to create a 4- to 6-inch pancake. Cook, flipping once, until golden brown, 3 to 5 minutes per side.
