Ingredients: The ingredient amounts are for four servings.

  • Light Coconut Milk 240ml or 8.1fl oz
  • Whey Protein 2 scoops, Vanilla
  • Frozen Strawberries 300g or 10.6oz
  • Chia Seeds 80g or 2.8oz
  • Strawberries 200g or 7oz, finely chopped
  • Greek Yoghurt 240g or 8.5oz

Instructions:

Add the light coconut milk, vanilla whey protein, and 300g frozen strawberries to a
blender. Blend until smooth.


Pour the mixture into a bowl and stir in the chia seeds until evenly combined.
Leave to rest for 10 minutes, then stir again to prevent the chia seeds from
clumping together.


Leave the mixture to sit for a further 30 to 60 minutes, or until thickened to a
pudding-like consistency.


Spoon the chia pudding evenly into 4 containers or bowls. Top each portion with
chopped strawberries and 60g of Greek yogurt.


Serve straight away or keep chilled until ready to eat.
