STEAMED VEGETABLE SALAD WITH EGG

 

Ingredients:

(makes 01 serving) 

  • 50g asparagus
  • 50g cherry tomatoes
  • 75g head cauliflower chopped into florets
  • 1/2 small onion
  • 50g spinach shredded
  • 1 tsp olive oil (7g)
  • balsamic
  • 1 lemon
  • 3 hard-boiled eggs whites without yolk
  • Salt & pepper

Method:

  • To a pan over medium heat, add asparagus, cherry tomatoes, cauliflower, and onion. Add ¼ cup of water, and simmer, covered until softened. Allow veggies to cool a bit, so they do not wilt the bed of spinach.
  • Add the balsamic dressing and ½ tsp of lemon juice and the olive oil. Blend till smooth, add water for smooth consistency and add season with salt and pepper.
  • Cut the boiled eggs in to wedges and mix with the vegetables.
  • Top with the balsamic dressing.
