SPINACH PRAWNS AND PUMPKIN
Ingredients:
- 150g pumpkin
- 250g spinach
- 1 whole egg
- 1 teaspoon extra virgin olive oil (7g)
- 1 tablespoon low fat cream cheese
- 150g Prawns (Barramundi, Basa, Calamari, Dori, Ling, Snapper, Whiting)
- 2 tablespoon chopped fresh parsley
- 10g breadcrumbs
- Salt and pepper to taste
Instructions:
- In a bottom Cook the pumpkin in boiling, salted water until they are tender, then drain and set them aside.
- Meanwhile wash the spinach well and drain the water, add the leaves in to a blender with the breadcrumbs, egg and cream cheese, blend till creamy smooth.
- Season the prawns with olive oil and pan fry for approximately for 8 – 10 minutes and add the creamy spinach on to the pan and cook for another 5 minutes stirring occasionally.
- Serve the boiled pumpkin and the creamy spinach fish and neatly arrange. Sprinkle some pepper on top.
