SPINACH PRAWNS AND PUMPKIN

 

Ingredients:

  • 150g pumpkin
  • 250g spinach
  • 1 whole egg
  • 1 teaspoon extra virgin olive oil (7g)
  • 1 tablespoon low fat cream cheese
  • 150g Prawns (Barramundi, Basa, Calamari, Dori, Ling, Snapper, Whiting)
  • 2 tablespoon chopped fresh parsley
  • 10g breadcrumbs
  • Salt and pepper to taste

Instructions:

  • In a bottom Cook the pumpkin in boiling, salted water until they are tender, then drain and set them aside.
  • Meanwhile wash the spinach well and drain the water, add the leaves in to a blender with the breadcrumbs, egg and cream cheese, blend till creamy smooth. 
  • Season the prawns with olive oil and pan fry for approximately for 8 – 10 minutes and add the creamy spinach on to the pan and cook for another 5 minutes stirring occasionally. 
  • Serve the boiled pumpkin and the creamy spinach fish and neatly arrange. Sprinkle some pepper on top.
