SPINACH FETA PANCAKES

Ingredients:
- 125g spinach
- 2 whole eggs
- 1 teaspoon extra virgin olive oil (7g)
- 100ml unsweetened low-fat almond milk
- 50g all-purpose flour
- 45g low-fat feta cheese
- Salt to taste
Instructions:
- In a bowl mix the flour, eggs, spinach, cheese, and milk, ideally with a hand blender. Make sure there aren’t any lumps. The batter should be liquidy, so if it is still too “doughy” add some more milk and season with salt to taste.
- Add some olive oil to a pan and then pour in the pancake mix. Fry for 3-4 minutes on each side. You’ll get the hang of it quickly.
- Serve hot and enjoy.
