SPINACH FETA PANCAKES

Ingredients:

  • 125g spinach 
  • 2 whole eggs
  • 1 teaspoon extra virgin olive oil (7g)
  • 100ml unsweetened low-fat almond milk
  • 50g all-purpose flour
  • 45g low-fat feta cheese
  • Salt to taste

Instructions:

  1. In a bowl mix the flour, eggs, spinach, cheese, and milk, ideally with a hand blender. Make sure there aren’t any lumps. The batter should be liquidy, so if it is still too “doughy” add some more milk and season with salt to taste.
  2. Add some olive oil to a pan and then pour in the pancake mix. Fry for 3-4 minutes on each side. You’ll get the hang of it quickly.
  3. Serve hot and enjoy.
