SPINACH EGG WHITE OMELETTE

 

Ingredients:

  • 200g egg whites
  • 1 teaspoon extra virgin olive oil (7g)
  • 2 cloves Garlic (Chopped)
  • ½ teaspoon Dry Parsley
  • ½ teaspoon Dry Rosemary
  • ½ teaspoon Dry Oregano
  • 100g Spinach 
  • Salt to and Black Pepper to taste

Instructions:

  1. Heat olive oil in a non-stick frying pan.
  2. When the oil is hot, add garlic and fry for a few seconds, till they turn slightly brown and the add the chopped spinach and sauté till cooked through.
  3. Add dried parsley, rosemary and oregano in the pan and immediately add the egg whites in the pan. Simmer the heat to medium low.
  4. Add salt and pepper and keep mixing the whites with a spatula so that they do not form lumps.
  5. Switch off the heat once the whites are 80% done. They will cook further with the heat in the pan.
