SPINACH AND SWEET POTATO CHICKEN BOMBS

 

Ingredients:

  • 200g sweet potato
  • 100g spinach
  • 150g boneless chicken breast 
  • 1 onion
  • 2 cloves garlic
  • 1/4 teaspoon thyme
  • 1/2 teaspoon oregano
  • 1/2 teaspoon chilli flakes
  • 1/4 teaspoon black pepper
  • 1/4 tablespoon lemon juice
  • salt as required
  • 1 teaspoon olive oil

Method:

Step 1 / 3

Start by boiling the sweet potatoes in a vessel with enough water to cover these over medium flames. Once they are boiled, peel the sweet potatoes, and keep them aside to cool. Meanwhile, place a pan over medium flame and add oil in it. Meanwhile, chop the garlic, onions and spinach leaves finely. Once the oil is hot, add garlic and onions in it. Sauté for a while until they become soft, and mixture turns aromatic add then add the chicken. Cook till the chicken is soft and tender.

Now, add the chopped spinach leaves along with red chili powder, chili flakes, thyme, oregano, and black pepper. Sauté for a while until the ingredients are combined well. Next, add the boiled sweet potatoes and season with salt as per your taste. Let the potatoes cook for a moment and mash the sweet potato mixture, using a masher or spatula. Once done, remove from heat and keep aside for cooling.

Make small balls out of the spinach-sweet potato mix and keep them in a plate. Now, place a pan over medium flame and add olive oil in it. Once hot, fry the potato balls in the oil until they turn crisp and golden brown in colour. Now, place the fried bombs in a plate lined with absorbent paper to soak up the excess oil. Serve these hot with some tangy dip to enjoy!
