SPICY TUNA POKE BOWL

 

Ingredients:

For the tuna:

  • 150g sashimi grade tuna (raw)
  • 30g sliced scallions
  • 1 tablespoon soy sauce 
  • 1 teaspoon sesame seeds
  • 1 teaspoon sriracha

For the spicy mayo:

  • 1 tablespoon kewpie mayonnaise
  • 1 teaspoon siracha sauce

For The Bowl:

  • 50g couscous (raw)
  • 100ml hot water
  • 100g cucumber peeled and diced ½ inch cubes
  • 50g carrots shredded
  • 100g spinach
  • 1 teaspoon butter (7g)
  • 2 scallions, sliced for garnish
  • 1 teaspoon black sesame seeds
  • Salt and pepper to taste

Instructions:

  1. Cook couscous according to packet instructions. Season and set aside.
  2. Meanwhile heat a pan and add butter. Once hot add the spinach and sauté well for 3 minutes. Season with salt and pepper and set aside.
  3. In a small bowl combine the mayonnaise and sriracha with a little water to drizzle.
  4. In a medium bowl, combine tuna with scallions, soy sauce, sesame seeds and sriracha. Gently toss to combine and set aside while you prepare the bowls.
  5. In a bowl, layer the couscous, the tuna, shredded carrot, cucumber and scallions and sautéed spinach.
