SPICY PRAWNS WITH SPINACH

Ingredients:

  • 150g Prawns
  • 1 teaspoon extra virgin olive oil (7g)
  • 50g baby spinach, leaves separated or lettuce
  • 80g cucumbers, sliced
  • 20g spring onions, sliced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon gochujang (Korean hot pepper paste)
  • 1 teaspoon honey
  • 1 clove of garlic, grated
  • 1 teaspoon grated fresh ginger
  • ¼ slice lemon, for serving

Instructions:

  1. Preheat the oven to 425°F. In a large bowl, whisk together lemon juice, gochujang, oil, and honey, then stir in garlic and ginger. Add prawns and toss to coat.
  2. Arrange in a single layer on a rimmed baking sheet and roast until just opaque throughout, 10 minutes.
  3. Serve prawns, spinach, and top with cucumbers, spring onion, lemon slices, and spinach.
