SPICY PRAWNS WITH SPINACH

Ingredients:
- 150g Prawns
- 1 teaspoon extra virgin olive oil (7g)
- 50g baby spinach, leaves separated or lettuce
- 80g cucumbers, sliced
- 20g spring onions, sliced
- 1 tablespoon fresh lemon juice
- 1 teaspoon gochujang (Korean hot pepper paste)
- 1 teaspoon honey
- 1 clove of garlic, grated
- 1 teaspoon grated fresh ginger
- ¼ slice lemon, for serving
Instructions:
- Preheat the oven to 425°F. In a large bowl, whisk together lemon juice, gochujang, oil, and honey, then stir in garlic and ginger. Add prawns and toss to coat.
- Arrange in a single layer on a rimmed baking sheet and roast until just opaque throughout, 10 minutes.
- Serve prawns, spinach, and top with cucumbers, spring onion, lemon slices, and spinach.
