SPICY PEANUT CHICKEN WRAPS
Ingredients:
- 100g boneless chicken breast
- 7g peanut butter
- 1tsp sesame oil
- 1/2 lime
- ¼ tsp garlic powder
- 1 tsp ginger (grated)
- 1 Mission low carb wrap
- 50g cucumber
- 50g carrot
- 30g lettuce
- Salt
- 1 tsp Chilli flakes
Method:
- Put 7g crunchy peanut butter in a bowl and whisk in 1 tbsp just-boiled water.
- Stir in 1 tsp grated ginger, chilli flakes, 1 tsp toasted sesame oil and a squeeze 1/2 of lime juice, then shred a cooked (boiled, grilled or baked etc…) chicken breast and toss with the peanut sauce.
- Add the chicken on to a wrap, then top with shredded carrot, cucumber, shredded lettuce and coriander. Roll up and eat.
