SPICY GRILLED PRAWN SUBS

 

Ingredients:

  • 150g prawns, peeled and deveined
  • 1 teaspoon extra virgin olive oil (7g)
  • 1 medium size hot-dog bun
  • 1 teaspoon low fat mayonnaise
  • 2 cloves garlic, peeled and smashed
  • 1 lemon, juiced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon Worcestershire sauce
  • 30g Shredded lettuce, 
  • 50g Sliced tomato
  • Salt and pepper to taste

Method:

  1. Add the olive oil, garlic, lemon juice, smoked paprika, cayenne, Worcestershire, salt, and pepper, to taste, to a measuring cup. Whisk well and pour over the shrimp in the casserole. Cover the dish and let the prawns marinate in refrigerator for 20 minutes.
  1. Preheat the grill to medium-high heat.
  1. Grill the prawns over medium-high heat for about 4 minutes total, flipping once halfway through. Add the bun to the grill and toast.
  1. Spread both sides of bread with the 1 teaspoon low fat Mayonnaise and top evenly with the prawns, shredded lettuce, and sliced tomatoes. Slice the bun and serve immediately.
