SPICY CHICKEN & CHICKPEAS

 

Ingredients:

  • 150g White Meat Boneless (Chicken breast, Turkey breast, Lean Pork)
  • 150g canned chickpeas 
  • 2 garlic cloves
  • 1 teaspoon extra virgin olive oil (7g)
  • 1 tablespoon lemon juice
  • 30g scallions, thinly chopped
  • 2 tablespoon chopped parsley
  • 1 teaspoon crushed red pepper / chili flakes
  • 50g tomato
  • 30g olives
  • 100g cucumber
  • Salt and pepper to taste

Instructions:

  1. Chop the chicken and sauté it in a non-stick pan with the olive oil at medium high heat, add the crushed red pepper and black pepper and a pinch of salt and stir until coated. Cover with a lid for 3-4 minutes or until the chicken isn’t pink anymore.
  2. Add the chickpeas without the liquid and keep stirring for another 3-4 minutes. Then add in the garlic and stir again for 1-2 minutes. Add the chopped scallion and stir again for another 2 minutes or until the chicken is done.
  3. Take the pan off the heat sprinkle some lemon juice and thinly chopped parsley on top.
  4. Dice the tomato, olives and cucumber. Season with salt and pepper and a drizzle of lime juice.
  5. Serve the Chicken with the Salad. Enjoy!
