SPICED FISH TACOS

Ingredients:

  • 150g White Fish (Barramundi, Basa, Pawns, Calamari, Dori, Ling, Snapper, Whiting)
  • 1 teaspoon extra virgin olive oil (7g)
  • 1 tablespoon fresh lime juice
  • 1 garlic clove, minced
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground paprika
  • 1/4 teaspoon cayenne pepper 
  • Salt and freshly ground black pepper

For Serving:

  • 2 corn tortillas, warmed
  • 30g shredded cabbage
  • 20g avocado, sliced
  • 5g chopped cilantro leaves
  • 10g bell pepper (for garnish)
  • 20g apple, sliced (for garnish)

Fish Taco Sauce:

  • 1 tablespoon sour cream
  • 1 tablespoon low-fat mayonnaise
  • 1/2 tablespoon fresh lime juice
  • 1/4 teaspoon garlic powder

Instructions:

  1. In a mixing bowl whisk together oil, lime juice, garlic, chili powder, cumin, paprika, cayenne, and season with salt and pepper to taste.
  2. Place fish into a dish or gallon-size resealable bag and pour marinade over the fish allow marinating in the mixture for 20 minutes (and no longer than 30 minutes).
  3. Preheat a grill to medium-high heat. Brush grill grates with oil and place fish on the grill.
  4. Grill until cooked through, about 3 minutes per side (cook time will vary based on the thickness of fish).
  5. While the fish is cooking whisk together sour cream, mayonnaise, lime juice, and garlic powder in a small bowl. Season with salt to taste.
  6. Mix the shredded vegetables and mix with the taco sauce. Add the filling to a taco shell then the flaked fish on top of the vegetables. Garnish with sliced bell pepper and sliced apples.
