SPICED FISH TACOS

Ingredients:
- 150g White Fish (Barramundi, Basa, Pawns, Calamari, Dori, Ling, Snapper, Whiting)
- 1 teaspoon extra virgin olive oil (7g)
- 1 tablespoon fresh lime juice
- 1 garlic clove, minced
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground paprika
- 1/4 teaspoon cayenne pepper
- Salt and freshly ground black pepper
For Serving:
- 2 corn tortillas, warmed
- 30g shredded cabbage
- 20g avocado, sliced
- 5g chopped cilantro leaves
- 10g bell pepper (for garnish)
- 20g apple, sliced (for garnish)
Fish Taco Sauce:
- 1 tablespoon sour cream
- 1 tablespoon low-fat mayonnaise
- 1/2 tablespoon fresh lime juice
- 1/4 teaspoon garlic powder
Instructions:
- In a mixing bowl whisk together oil, lime juice, garlic, chili powder, cumin, paprika, cayenne, and season with salt and pepper to taste.
- Place fish into a dish or gallon-size resealable bag and pour marinade over the fish allow marinating in the mixture for 20 minutes (and no longer than 30 minutes).
- Preheat a grill to medium-high heat. Brush grill grates with oil and place fish on the grill.
- Grill until cooked through, about 3 minutes per side (cook time will vary based on the thickness of fish).
- While the fish is cooking whisk together sour cream, mayonnaise, lime juice, and garlic powder in a small bowl. Season with salt to taste.
- Mix the shredded vegetables and mix with the taco sauce. Add the filling to a taco shell then the flaked fish on top of the vegetables. Garnish with sliced bell pepper and sliced apples.
