Spiced Egg & Yogurt Crumpets

 

Ingredients: (Makes 1)

  • Eggs 2
  • Crumpets 2
  • Greek Yoghurt 2 tbsp, 0% fat
  • Chilli Crunch Oil 1 tsp
  • Paprika 1 tsp
  • Chilli Flakes 1/2 tsp

Instructions:

Place the eggs in a saucepan and cover with cold water. Bring to a boil, then
reduce heat and let simmer for 7-8 minutes for soft-boiled eggs or 9-10 minutes
for firmer yolks. Transfer to an ice bath for a couple of minutes, then peel the eggs.


In a bowl, mash the boiled eggs with a fork. Mix in yogurt, paprika, chili flakes, and
chili crunch oil until creamy and well combined.


Lightly toast the crumpets in a toaster or under a grill until golden and crispy.
Spread the spiced egg mixture over the warm crumpets. Top with an optional
extra dollop of yoghurt
