SPICED BEETROOT

 

Ingredients:

  • 230g beetroot
  • 1 medium onion
  • 1 red chilli
  • 20g red lentil
  • 5g grated coconut
  • 5g tamarind
  • 1 teaspoon sugar free syrup
  • 1 teaspoon butter (7g)
  • salt as required
  • 5g coriander seeds
  • 10g coriander leaves
  • 4 lemon wedges

Method:

Step 1

Dry roast the red chilies, coriander seeds and dal and blend it with the coconut, tamarind, and syrup.

Step 2  

In a pan, heat the butter and fry the onions until golden brown. Mix in the spices mixture and sauté till all the spices are mixed well. Then add the boiled beetroot and mix well.

Step 3  

Garnish with coriander leaves and lemon.
