SPANISH SEAFOOD RICE
Ingredients:
- 1 teaspoon extra virgin oil (7g)
- 50g onion, finely chopped
- 100g capsicum, deseeded and sliced
- 1 teaspoon chilli powder
- 1 tablespoon tomato sauce
- 2 garlic cloves, sliced
- 65g Basmati Rice (raw)
- 130ml of water
- 150g seafood mix (Barramundi, Basa, Prawns, Calamari, Dori, Ling, Snapper, Whiting)
- ½ lemon juice
- small handful flat-leaf parsley, roughly chopped
Instructions:
- First rinse the rice well under running water.
- Then Heat oil in a saucepan and soften the onion for 6-7 minutes. Add the pepper and garlic, cook for 2 minutes more, then stir in the cooked rice and cook for 1 min, stirring to coat.
- Pour in the water, bring to the boil. Cook, uncovered, at a gentle bubble, for 15 minutes, stirring occasionally until the rice is tender.
- Stir in the seafood and lemon juice, tomato sauce and chilli powder cook for 5-10 minutes or until piping hot and completely cooked through. Serve in warm bowls scattered with the parsley.
